Aluminium foil is a culinary accessory commonly found in today’s kitchens , but has it ever crossed your mind that it could be introducing unwanted elements into your food? In the latest episode of Talking Point, CNA partnered with SETSCO’s Food Chemistry Department to address this question. To analyse whether aluminium leaches into food during the cooking process, SETSCO’s team employed the use of Inductively Coupled Plasma Optical Emission Spectroscopy (ICP-OES) – a highly accurate instrumentation used to detect and quantify trace elements.

This method involves introducing food samples into a high-temperature plasma, which excites atoms and ions, causing them to emit light at a certain characteristic wavelengths. By measuring these emissions, we can accurately determine aluminium concentrations in the tested foods. This testing method is widely used in food safety, pharmaceutical, and environmental testing. So what did the results reveal? Find out more by watching the video below!
